Crockpot White Chicken Chili
White chicken chili is the fair-haired cousin of the bowl of red — no tomatoes, no mince, just tender shredded chicken, creamy white beans and green chiles in a broth that tastes like it took far more effort than it did. It is a newer dish than most in granny's book, but it runs on her oldest principle: a cheap cut, low heat, and patience.
Two things matter. First, the liquid looks scant when you load the pot — trust it. A slow cooker barely evaporates, so it wants about half what a stovetop pot would take, and the chicken gives up plenty of its own. Second, the cream cheese goes in for the last 30 minutes and not a minute sooner. Dairy that sits through a six-hour cook curdles into grainy bits; dairy added at the end melts into silk.
Granny would have eyed the crockpot with suspicion, then claimed it as her own the first time it fed six people while she was out playing cards. Some machines earn their counter space.

- FOR THE CHILI
- 1 tbsp olive oil, for browning (optional but worth it)
- 700 g (1.5 lb) boneless, skinless chicken thighs (about 6), or 3 large breasts
- 1 large onion, finely chopped
- 3 garlic cloves, crushed
- 2 x 400 g (14 oz) tins cannellini or great northern beans, drained and rinsed
- 2 x 100 g (4 oz) tins chopped green chiles, undrained
- 500 ml (2 cups) chicken stock
- 2 tsp ground cumin
- 1 tsp dried oregano
- TO FINISH
- 180 g (6 oz) full-fat block cream cheese, cubed, at room temperature
- 150 g (1 cup) frozen sweetcorn
- 1 lime, juiced
- Salt, pepper and fresh coriander (cilantro), to serve
Method
- Brown. Heat the oil in a frying pan over medium-high heat and brown the chicken thighs for 2 to 3 minutes a side. You can skip this and put them in raw — the chili will still work — but browning is where the deep flavour lives, and granny never skipped it.
- Load. Tip the beans, green chiles, onion, garlic, cumin and oregano into the slow cooker. Pour in the stock, give it a stir, then nestle the chicken down into the liquid. It will look like too little liquid. It is not — the pot barely evaporates a drop.
- Cook. Lid on. Cook on Low for 6 to 7 hours, or High for 3 to 4. Leave the lid alone — every peek lets the heat out and adds 20 to 30 minutes to your dinner.
- Shred. Lift the chicken onto a plate and shred it with two forks — it should fall apart, and a thermometer should read 74C (165F). Return it to the pot.
- Enrich. Stir in the cream cheese and sweetcorn, put the lid back on and cook on Low for 30 minutes more. Stir well at the end until the cream cheese has melted into a silky, pale broth.
- Finish. Squeeze in the lime, then season with salt and pepper and taste. Want it thicker? Mash a ladleful of beans against the side of the pot and stir it through. Serve with coriander scattered over.
Buy your cream cheese in a block, not the spreadable tub — the tub sort carries extra water and thins the pot. Cube it and let it sit out while the chili cooks, and it will melt in minutes instead of sulking in lumps.

Dairy goes in last, always
Cream cheese that sits through a six-hour cook splits into grainy specks. Added for the final 30 minutes on Low, it melts smooth every time. Use full-fat — the light stuff has less to hold it together and is far more likely to split.
Keep the lid on
A slow cooker builds gentle heat and a lifted lid throws it away. Each peek costs you 20 to 30 minutes of cooking time, so save your looking for the shredding stage.
Too thin? Two fixes
Mash a ladleful of beans against the pot and stir — that thickens it the old way, no flour in sight. For a thicker chili still, stir in a slurry of 1 tablespoon cornflour (cornstarch) and a splash of cold water, then cook on High with the lid off for 15 to 20 minutes.
